Green mango powder, also known as amchoor, is a citrusy seasoning made from dried unripe green mangoes. The fruit are peeled, thinly sliced, then sun dried. Finally, they are ground into fine powder. The fragrance smells similar to honey and the taste is sour and fruity. Some enthusiasts consider it a perfect balance of sweet and sour. The spice is used widely in north Indian dishes, finds its way into samosa and pakora fillings, as well as being featured in stews, fruit salads, pastries, curries, chutneys and pickles.

Green mango powder (amchoor) can make a great substitute for lemon or lime juice in a recipe, especially if you don't want to add moisture. Since too much of the flavor could be overpowering, always start with a small amount, approximately 1/2 teaspoon, then add more to taste. Note: green mango powder should always be added towards the end of cooking since heat can damage the flavor.

Green Mango Powder Okra


  • 2 teaspoons dried green mango powder
  • 18 ounces of okra
  • 4 tablespoons vegetable oil
  • 1/2 teaspoon cumin seeds
  • 2 large onions, sliced
  • 3-4 green chilies, slit
  • 1 teaspoon red chili powder
  • 1 tablespoon coriander powder
  • 1/2 teaspoon turmeric powder
  • salt to taste


  1. Wash and dry the okra or wipe with a wet cloth.
  2. Cut off both ends and then slice into 2" long pieces.
  3. Slit the pieces horizontally without severing in two.
  4. Heat the oil and add cumin seeds. When they change color, add onions and saute until lightly golden.
  5. Add chilies and saute for 30 seconds.
  6. Add okra, then sprinkle red chili, coriander and turmeric powders.
  7. Mix well and cook on low while stirring occasionally.
  8. Add salt and green mango powder.
  9. When okra is almost cooked, increase the heat and cook for two minutes.

Green Mango Powder Spuds


  • 1/2 teaspoon dried green mango powder
  • 4 large potatoes, peeled and cubed
  • 1 1/2 tablespoons butter
  • 1/2 teaspoon cumin seeds
  • 2 green chilies, chopped
  • 1 inch piece fresh ginger, finely chopped
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon coriander
  • 3/4 teaspoon salt
  • 1 bunch fresh cilantro, chopped


  1. Place potatoes in saucepan with enough water to cover.
  2. Bring to a boil, cook 10 minutes until tender.
  3. Drain and permit to cool slightly.
  4. Heat butter in large skillet over medium heat.
  5. Lightly toast cumin seeds in butter.
  6. Mix in green chili and ginger.
  7. Season with chili powder and coriander.
  8. Stir in the potatoes and cook for about 5 minutes.
  9. Season with green mango powder and salt, continue cooking for about 15 minutes.
  10. Garnish with cilantro and serve.

Green Mango Powder Rice


  • 2 teaspoons dried green mango powder
  • 4 cups rice, cooked
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon chana dal
  • 1 tablespoon peanuts
  • 1/2 teaspoon urad dal
  • dried red chili pepper to taste
  • 1/4 teaspoon asafetida
  • 1/4 teaspoon turmeric
  • 1 1/2 tablespoons dry grated coconut
  • 2 string curry leaves
  • 2 pinch pepper powder
  • 1/4 teaspoon jaggery powder
  • salt to taste


  1. Heat oil in non-stick pan.
  2. Add mustard seeds once oil is hot and permit to splutter.
  3. Add chana dal, urad dal and peanuts, fry until golden brown.
  4. Add red chili asafetida, turmeric, curry leaves, and pepper powder.
  5. Keep the stove very low / warm.
  6. Add grated dry coconut, jaggery powder, and dried green mango powder.
  7. Once the jaggery melts turn off the stove.
  8. Be careful not to burn your masterpiece.
  9. Immediately add cooked rice and salt, mix well.
