Thai Mango Salad
- 400g Mango slices
- 2 Shallots
- 2 Red Bird's Eye chili peppers
- 3 Tablespoons Fish Sauce
- 4 Tablespoons Lime Juice
- 20g Dried shrimp
- 40g Roasted peanuts
- 3-4 Tablespoons brown sugar
1.) Reconstitute the dried mango slices. (Slice to desired size, soak in water that barely covers the fruit, in the fridge, until the fruit plumps. Hot water works faster and ice water may improve texture.)
2.) Discard any remaining water.
3.) Slightly crush the chilies, shallots, dried shrimp and peanuts together.
4.) Mix fish sauce, lime juice and sugar together.
5.) Combine all ingredients and toss well.
Diced Mango Slices, Yogurt and Granola
Try adding diced mango slices to your favorite granola and yogurt. Experiment with them reconstituted or not. Different combinations will keep your taste buds excited.
